Rosemary Extract, INOLENSTM – Where Perfectionism and Science Meet

Vitiva specializes in extraction of natural products. Our largest product line consists of natural antioxidants from Rosemary.

This lecture will focus on one of our advanced product lines, INOLENS™. One of the main problems confronting Rosemary extract is that it has a strong odour and bitter taste. This affects the organoleptic characteristics of products. Until recently  only a limited number of applications could benefit from the rosemary superior functionality and great antioxidative properties. Vitiva has developed a full range of deodorised products under the brand INOLENS™. This product line opens the door for many new application possibilities where Rosemary extract could never be considered as a potential application before. The INOLENS™ is oil soluble and possesses excellent properties that can be adjusted to meet customer’s specific needs. Mayonnaise, omega oils and other PUFAs, salad dressings, sauces, white chocolate, dairy products, flavours and fragrances,  and even cosmetics are some of the products that can utilize INOLENS™ functionality. To prove low odour characteristics in INOLENS™ we measured the amount of the essential oil compounds such as cineole, endo borneol, alpha-terpinene, gamma terpinene, camphor and terpinene-4-ol by GC. A comparison between Vitiva’s INOLENS™ and competitors products was made.

In the present work, the use of natural rosemary extracts from INOLENS™ product line in special applications such as, PUFA, injected and fresh meat, pastrami, chocolate, praline fillings, toffee cream, nuts, pastry and edible oils is presented. The antioxidative efficiency of rosemary extracts was determined by rancimat method, by peroxide value and anisidine value measurements and a TBA test. Individual polyunsaturated fatty acids were measured using GC, and meat colour was measured by Minolta colorimeter. Vitiva rosemary extracts, especially INOLENS™ showed the best antioxidative properties when compared to  products available on the market . Subsequently there was no odour and taste effect on final product. Therefore INOLENS™ is the ultimate natural solution for antioxidative stabilisation of foods. Majda Hadolin Kolar did her Ph.D. on isolation of bioactive compounds from natural sources. She worked as a researcher in Laboratory for separation processes at Faculty of chemistry and chemical engineering at University in Maribor. Her speciality was conventional and supercritical fluid extraction and chromatography.

She is employed in Vitiva company since 1999. She is working on instrumental analyses (HPLC, GC, UV/VIS-spectrophotometry), development of processes for isolation of natural extracts, and on testing and application of natural antioxidants in various food systems.
